Brussel Sprout Hash with Eggs Recipe
- 9-10 brussel sprouts thinly sliced
- 2 shallots chopped
- 4 strips of bacon
- 2 tsp apple cider vinegar
- salt and pepper to taste
- 4 eggs (preferably pastured)
In a large saute pan over medium heat, cook your bacon until your liking, remove from pan and tear into large chunks.
Into the same pan add the shallots and cook for 3 minutes. Then add in your brussel sprouts and apple cider vinegar and saute for 7-8 minutes longer until they are soft. Stir your bacon back in and add salt and pepper to taste.
Make space for your eggs by making wells in the hash. Crack the eggs into the wells, cover and cook for about 3-4 minutes, or until whites are cooked.
Scoop out with a large flat spatula and enjoy!
